Apricot & Strawberry Preserve Hamentashen

A little background on the hamentashen...

"While there is an old legend that Haman wore a three-cornered hat, and to commemorate his downfall, we eat a three-cornered pastry,14 there is a deeper significance as well.

The Midrash says that when Haman recognized (the merit of) our three forefathers, his strength immediately weakened. Because of this, we eat three-cornered pastries and call them “Haman weakeners (tashen).” (-http://www.chabad.org/) 


Ingredients:

All Purpose Flour

Kosher Salt

Canola Oil

Baking Powder

4 Large Eggs

Sugar

1 Lemon

1 Sumo Orange

Apricot Preserve


step by step recipe as follows:


 + 4 cups of all purpose flour

 + 4 cups of all purpose flour

+ 2 tsp of baking powder

+ 2 tsp of baking powder

+ 1/2 tsp of kosher salt

+ 1/2 tsp of kosher salt

step 1:

Mix

together

all the

dry ingredients

in a

large bowl,

and

set aside

for later.

 

 


Step 2: in a (new) large bowl, combine all the wet ingredients.

 +2  Large eggs and 1 yolk

+ the zest of 1 lemon

+ the zest of 1 lemon

+ the juice of 1/2 a Sumo orange

+ the juice of 1/2 a Sumo orange

 +1 cup of sugar

 + the juice of 1/2 a lemon

+1 cup of canola oil

STEP 3:

A. Slowly incorporate the dry mix (1/4 at a time).

B. Mixing in-between each addition of the dry mixture.

C. when you finish combining the two mixtures you should be left with a sticky dough.

D. Shape the dough into a disk, wrap with plastic wrap, and place in the refrigerator over night.

step 5: Fill the spaces in with the apricot & strawberry preserves, lightly brush with egg wash, then bake at 375 degrees for 10-13 minutes.
