ONE BANANA BANANA BREAD WITH CHOCOLATE CHIPS
INGREDIENTS
1 Ripe banana
1/4 cup of white granulated sugar
1/4 cup of dark brown sugar
3 Tbsp of coconut oil
1 Lg. egg
1 tsp of oat milk
1/2 tsp of ground cinnamon
1/2 tsp of ground nutmeg
3/4 cup of all purpose flour
1 tsp of baking powder
1 tsp of baking soda
1/2 tsp kosher salt
coconut oil spray
chocolate chips (optional)
small baking dish (4x8)
You can modify this recipe with what you have at home, you can substitute any milk, any flour, any oil, any sugar, and any spices.
DIRECTIONS
Start by pre-heating your oven to 325 degrees.
In a medium sized bowl cream together the coconut oil and sugars with a whisk.
Next, add in the egg, oat milk, nutmeg and cinnamon, whisk to incorporate.
Now, mash in your banana and whisk to blend everything together. Set aside until needed.
Next, in a new bowl mix together the dry ingredients; flour, salt, baking soda & baking powder.
Now add the dry ingredients to the wet, adding in a little at a time until its all combined.
Next, add in your chocolate chips, mix to combine.
Once you have the batter ready, spray your baking dish with coconut oil spray, then pour in the batter.
Bake in the oven at 325 degrees for 35-40 minutes, or until you can poke it with a toothpick and it comes out clean (no batter residue).
