SALAD SHIRAZI

INGREDIENTS

  • 3 Persian cucumbers, diced

  • 3 Roma tomatoes, deseeded & diced

  • 1/2 red onion, diced

  • 1/2 green bell pepper, diced

  • 1 Tbsp chopped parsley

  • 1 Tbsp chopped tarragon

  • Juice of 3 limes

  • 3 Tbsp olive oil

  • 1/2 tsp coarse kosher salt

  • 1/2 freshly cracked black pepper


DIRECTIONS

  1. Start by dicing up the cucumbers, tomatoes, onion and bell pepper, then place into a large bowl.

  2. Next, finely chop the tarragon and parsley, measure out 1 tbsp of each and place into the bowl with the veggies.

  3. Now, to make the dressing, whisk together the lime juice, olive oil, salt and pepper. Once incorporated, pour over the bowl and toss all the ingredients together to coat evenly.

  4. Serve and enjoy!
