OAT MILK PANCAKES


Ingredients

  • 1 1/2 cups of oat milk 

  • 2 cups of APF (all purpose flour)

  • 2 tbsp light brown sugar

  • 2 tbsp white granulated sugar ( I use organic)

  • 2 tsp baking powder

  • 1 tsp coarse kosher salt 

  • 1 large egg

  • 3 tbsp unsalted butter (melted & cooled)

  • 1 tbsp Vanilla ext. 

  • Ghee (for cooking)


Directions 

  1. Start off by mixing together the dry ingredients; APF, Sugars, baking powder and salt. whisk together to make sure the ingredients are well incorporated. 

  2. Now, mix together the wet ingredients; oat milk, egg, melted and cooled butter, and vanilla extract. 

  3. Next, add the wet to the dry mix and whisk together until batter forms (it’s ok if you have some lumps). Let sit for 10 minutes before cooking. 

  4. Now in a cast iron pan over medium heat add 1tsp of ghee or (unsalted butter). once the pan is hot, using an ice cream scooper, scoop out as many pancakes that will fit in your pan without crowing it, (my pan would fit 3 pancakes comfortably at a time). 

  5. Once you see bubbles start to appear the pancake is ready to flip! Continue to cook on the other side until I reaches a golden brown color (about 1 min.) 

  6. Enjoy with your favorite toppings!
