Buffalo Cauliflower Wings

Ingredients

 

For the Cauliflower:

  • 2 Tbsp of melted unsalted butter
  • 1/3 of a cup of Hot Sauce
  • 1 Tbsp of fresh squeezed lemon juice
  • 2 Tbsp of smoked olive oil
  • 1 Large head of cauliflower

 

For the Blue Cheese Dipping sauce:

  • 1/4 of a cup of Greek yogurt (FAGE)
  • 1 1/2 Tbsp of crumbles blue cheese
  • 1 Tbsp of whole milk
  • 2 tsp of mayo (I like to use a vegan mayo like, Just Mayo)
  • Kosher salt & freshly cracked pepper

1. Start by preheating your oven to 400 degrees F. 

2. Next, combine the melted butter, hot sauce, and lemon juice. 

3. Whisk to blend well, and set aside for later. 

4. Now, combine all the blue cheese dipping sauce ingredients together in a small mixing bowl.

5. Whisk to blend well. 

6. Once blended, cover and place in the refrigerator to chill.

7. Remove the leaves from the cauliflower head.

8. Next, break down the large head of cauliflower into small florets. 

9. In a large bowl, mix together 1/2 cup of water, 1/4 tsp of kosher salt, and the smoked olive oil. 

10. Place the florets in the bowl and toss to coat evenly. 

11. Next, place the florets onto a rack lined baking sheet and bake for 25 minutes. 

12. Remove the cauliflower from the oven after 25 minutes. 

13. Toss in a large bowl with the hot sauce to coat. 

14. Place back onto the baking sheet (without the rack this time), and roast for another 7 minutes.
